Simple Banana Pancake Recipe + Happy Weekend!
Sometimes pancakes sound impossible in the mornings. While they might be delicious they aren't always the healthiest or quickest pick, but this recipe sure is! We are in love with these simple banana pancakes, and topped with nutty coconut whipped cream we know you won't be able to turn them down!
- 4 eggs
- 2 bananas
- 1 cup oats
- chopped walnuts
- coconut whipped cream
Mash the bananas in a medium bowl until smooth. Add eggs and stir until complete incorporated. Next, stir in oats. Add a dash of cinnamon or vanilla for added flavor. Heat a dry nonstick griddle or pan with a small bit of coconut oil or other favorite oil to medium high heat. Spoon batter into skillet and cook until both side are golden brown. Remove from skillet and top with your favorite berries, nuts, or coconut whipped cream.
Coconut Milk Whipped Cream
- 1 14ounce can of coconut cream or full fat coconut milk
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
Chill coconut cream/milk in refrigerator overnight. Chill a medium mixing bowl for 10 minutes before whipping. Carefully remove can from the refrigerator without shaking the can, and remove lid. Scrape out the thickened cream leaving any liquid behind. Place cream into chilled mixing bowl. Beat with an electric mixer with whisk attachment for 30 seconds until thickened, add powdered sugar and beat until smooth and thick. Serve on top or on the side of banana pancakes.
